Have you ever wished for those Chinese almond cookies to be gluten-free? I have a gluten-free version that is just spectacular. You can have these ready for your family to snack on for dessert or as an afternoon treat. I love a crunchy cookie, and these have all the perfect crunch, including the almond in the middle—an ideal finish to Teriyaki Chicken Drumsticks.
