You can have these ready for your family to snack on for dessert or as an afternoon treat. I love a crunchy cookie, and these have all the perfect crunch, including the almond in the middle—an ideal finish to Teriyaki Chicken Drumsticks.

Ingredients
- 2 cups almond flour
- 1/2 cup unsweetened coconut flakes
- 3 tbsp coconut sugar
- 8 tbsp melted Irish butter
- 1 tsp vanilla extract
- 14 almonds
Instructions
- preheat oven 350 degrees
- Mix dry ingredients in a bowl. In a separate bowl, mix butter and vanilla. Combine butter mix with dry mix until completely incorporated. Prepare a baking sheet. Use a cookie scoop and scoop out each cookie and flatten with clean hands. Press one almond into the center of each cookie. Bake for 10-12 minutes until golden. Let cool and serve.
