Ceviche Stuffed Peppers

Looking for something healthy for the Super Bowl game? I am making these. I love stuffed peppers. However, I had a rough January, and I am in need of healthy snacks.  

Simple Hummus will also be out for the big game bites. Let me know who plans to make healthy snacks for your game-watching munchies.

Makes 4 Servings

Ingredients

1 clove of garlic

1/2 medium red onion

2 tsp lime juice

12 large cooked shrimp shelled and deveined.

Cilantro leaves from 3 stems

salt to taste

6 mini sweet peppers

2 tbsp mexican shredded cheese

1 tbsp fresh chopped chives

Directions

Preheat oven 350 degrees. Use a food processor. Peel garlic and pulse in food processor until minced. Slice onion so it will move around the food processor easier. Pulse a few times, so you have small chunks. Add Lime, shrimp, cilantro, and salt. Pulse a few times, you want to still see chunks of shrimp. Cut Peppers in half lengthwise. Remove seeds and Pith. Layout on parchment paper. Fill each half with shrimp mix. Top with a little bit of cheese. Place in oven and bake for 10 mins until cheese is turning golden. Remove from oven garnish with fresh chives and serve.
