
A simple cookie you can throw together in a pinch. I love keeping food simple, easy, and delicious. All we really want from our food is to make the people we love happy. I can tell you, as a mom, it makes me ecstatic when the teens and college kids are coming home and want me to make something. I am on it. I love that everyone looks forward to coming to my house to eat and hangout.

Ingredients
8 oz Irish butter (room temperature)
1 cup coconut sugar
1 cup peanut butter
3 eggs
2 tsp vanilla extract
3 cups rolled oats
2 tsp baking soda
Directions
Pre heat oven to 350 degrees.
Cream butter and sugar together with an electric mixer. Add peanut butter and mix until incorporated. Add eggs, vanilla and keep mixing. In a separate bowl, combine oats and baking soda together. Slowly start adding oats to the batter mix. Once all mixed together, use a cookie scoop to scoop out on to prepared baking sheet. Flatten each cookie with a fork. Bake for 12 minutes until edges start to brown.
