
In honor of National Cheese Ball Day, I made these mini Black Truffle Cheese Balls. There is always something special about small bite-size snacks. I have to admit that cheese balls make me think of a 50’s party. Cheese balls have been a social gathering staple for as long as I can remember. These little cheese balls could fall into the keto fat bombs of today. They are a perfect small snack and are ideal when we start getting together to watch sports together.
I like just having these in the refrigerator for a little snack—a perfect appetizer before dinner.
Ingredients
- 8oz cream cheese
- 1/4 cup shredded gouda cheese
- 1 tbsp mushroom and black truffle sauce
- 1 tsp butter
- 1 shallot
- 3 tbsp sliced almonds
Instructions
- In a bowl, mix cream cheese, gouda, and truffle sauce.
- Mince shallot. In a small skillet melt butter. Add shallots sauté until soft. Add almonds and stir until almonds start to turn golden. Put almond mix on a cutting board. Use a cookie scoop and make a ball of cream cheese with palms of hands. Roll each ball in shallots and almonds. Place cheese balls on a plate and in the refrigerator for 30 minutes and serve.
