Green Crunch Salad is packed full of flavor. I love this super, simple, flavorful salad—so much crunch from the coniferous vegetables and pomegranate seeds, balanced by the creaminess of the avocado.
I thought this was a fun recipe. It is one I put together using all the ingredients I found at Trader Joe’s. I made with some veggies that will last a little longer in your house. Don’t plan on leftovers.

Cruciferous Crunch Collection has kale, brussels sprouts, broccoli, green cabbage and red cabbage.
10oz bag Cruciferous Crunch Collection
1 tbsp extra virgin olive oil
1/2 cup raw pistachios
2 tbsp pomegranate seeds
2 tbsp balsamic and Fig dressing
1 avocado sliced
Toss Cruciferous Crunch Collection with olive oil. Mix in pistachios. Spread out on a baking sheet. Place on middle rack in the oven under the broiler. Broil until they get a bit of char. Remove and place the mix in a bowl toss with pomegranate seeds and dressing. Plate salad and top with avocado.
