
My daughter came home for college and immediately wanted cookies. She wanted snowballs, I made gluten-free snowballs so I could eat some too. My favorite cookie at the holidays has always been the snowball. There is something about the first taste being the melty sugar from the powdered sugar coating.
For the adults, make some New Years Warm Tequila Punch and some other cookies, Carmel Apple Cookies and Mexican Spiced Chocolate Chip. Now you are ready for a holiday open house.

Makes 14 Cookies
Ingredients
1 cup almond flour
1 cup coconut flour
2 tsp baking powder
6 tbsp irish butter
1/4 cup coconut sugar
2 tsp vanilla extract
3/4 cup toasted pecan halves
1/4 cup powdered sugar
Directions
Pre heat oven 350 degrees
Mix flours and baking powder together in a bowl. In another bowl, use an electric mixer Cream butter and coconut sugar until fluffy. Add vanilla. Slowly start adding flour mix to the butter until all incorporated. Chop pecans and mix into batter. Use a cookie scoop. Scoop out dough and roll into balls place on prepared cookie sheet. Bake cookie balls about 8 to 10 minutes until just golden. Let cool completely. Roll each cookie in powdered sugar and serve.
