Ingredients
- 1 1/2 cups almond flour
- 1 tsp baking powder
- pinch salt
- 8 tbsp coconut oil(extra for greasing)
- 3/4 cup coconut sugar
- 3 large eggs
- 2 tsp vanilla extract
- 1 tsp rum
- 4 rings of fresh pineapple
- fresh cherries for garnish (optional)
Instructions
- Preheat oven to 350 degrees. Mix dry ingredients in a bowl. Using an electric mixer, whip coconut oil, and sugar until fluffy. Add eggs vanilla and rum. Mix until light and fluffy. Slowly add dry mix to wet while beating with mixer. Combine until all incorporated. Grease a springform pan and line bottom with parchment paper. I use a small springform pan (7 inch). You can use what size you like. Just adjust the cooking time. Arrange pineapple rings on top of parchment paper. Place batter in the pan and bake about 40 minutes until a toothpick comes out clean with some sticky crumbs.
