Blood Orange Chocolate Dipped Cookies

Blood oranges are in season right now. These delicious cookies will make you so happy you can find blood oranges right now. I used some blood orange olive oil (Olive Tree) and fresh blood orange juice to make these spectacular cookies. I love dipping them in dark chocolate. The perfect bright treat any time of the year. I may have to freeze some blood orange juice, so I will always have it on hand.  

Another tip. These are sweet for me; I prefer less sugar. If you are like me, cut the sugar to 1/2 a cup and use no sugar added chocolate. That will change your carb count a lot.

Makes 18 cookies

Ingredients

cookies

2 1/2 cups almond flour

3/4 cup coconut sugar

1 1/2 tsp baking powder

4 tbsp blood orange olive oil

juice of one blood orange (about 3 tbsp)

2 eggs

2 tsp vanilla extract

chocolate dip

1 cup semisweet chocolate chips

1 tsp blood orange olive oil

Directions

Preheat oven to 350. Mix cookie ingredients together in a bowl until thoroughly incorporated. Use a cookie scoop and scoop out cookies on to prepared cookie sheet. Bake for 7 to 8 minutes until browning on edges. Remove and let cool completely. Once cookies are cooled completely. Warm chocolate and olive oil in a small saucepan. Warm over low heat, stirring constantly. Once melted, remove from heat. Dip half of each cookie in melted chocolate. Place cookie back on baking sheet. Place cookies in refrigerator for five minutes to harden chocolate. Enjoy with your family.
