
Cold winter days call for warm soup. This one will warm your soul and make you glad for chilly days. I love serving a hearty soup with crusty bread. For dessert, make some Carmel Apple Cookies.

Ingredients
1 tbsp extra virgin olive oil
1/2 yellow onion
2 stalks celery
2 medium carrots
1/4 cup brandy
1 tsp summer savory
3 cups chicken bone broth
1 15oz can red beans
1 tsp hot sauce
5 stalks of kale
pepper and salt to taste
Directions
In a soup pot, heat olive oil. Chop onion, celery, and carrots. Sauté in Olive oil until onions are tender. Add brandy and deglaze soup pot. Add broth, beans, and hot sauce bring to a simmer for 10 minutes. Remove kale leaves from the stalk. Discard stalks. Rough chop kale leaves. Stir in kale, once kale is wilted serve.
