Romesco Sauce

I love this tomato sauce. It has a bold flavor, and the almonds make it a little hardier than other sauces. I use this sauce on a variety of dishes. Romesco sauce can bring an unexpected surprise to a recipe. Make some to keep around and top vegetables or a main course of meat or fish.

Makes 4 Servings

1 can roasted tomatoes 14.5 oz

6 mini sweet peppers roasted

4 cloves garlic roasted

1/2 cup roasted almonds

1/2 tsp paprika

1/4 tsp cayenne pepper

1 tbsp olive oil


Place everything in the blender and blend until very smooth. Add olive oil while blending. I like mine really smooth.
