
One more pumpkin spice recipe for the last day of the month. I thought I would make these as a treat for my friends when we get together for Halloween. They are so easy to make, and you can use any cookie you want. I made these with Oreos when I was working on the cookbook for my kid’s school. We put out a cookbook for the centennial year. Keep this easy recipe on hand when you need a quick treat.

Ingredients
8 oz cream cheese
4 oz pumpkin spice cookies
1 1/2 oz white chocolate
Directions
Cube cream cheese. Put cookies in a food processor or blender and pulse until finely ground. Use a mixer and blend cream cheese and cookie crumbs together. Use a cookie scoop, scoop and then roll into balls with hands. Place white chocolate in a bowl. Microwave white chocolate for 10 seconds. Stir and repeat until melted and smooth.
