
This is tomato comfort food. Baked up in the oven and topped with a crust of cheese. Serve with toasted slices of french bread. I love dishes that make me want to smell them cooking.

Ingredients
2 lbs heirloom tomatoes
2 tbsp extra virgin olive oil divided
2 tsp salt
1/2 tsp thyme (dried)
3/4 cup shredded aged cheddar cheese
Directions
Preheat oven to 400 degrees. Core tomatoes and slice 1/4 inch thick. Toss tomato slices with 1 tablespoon olive oil and Salt. Arrange on a paper towel and let juices drain about 15 minutes. In a small dutch oven, pour the remaining oil and spread evenly at the bottom of the dish. Toss tomatoes with thyme. Place tomatoes in even layers in dutch oven. You will have about 3 layers. Roast in oven until tomatoes start to bubble, about 15-20 minutes. Top with shredded cheese and place back in oven until cheese starts to bubble and turn golden. Serve warm.
