Ingredients
- 1 tbsp extra virgin olive oil
- 1 medium red onion
- 2 cloves garlic
- 1 cup diced tomatoes
- 2 medium carrots
- 2 cans white beans
- 1 cup water
- 2 tsp chicken soup base
- 1 tsp oregano
- 1/2 tsp thyme
- 2 tbsp lemon juice
- 3 cups fresh spinach
Instructions
- Warm oil in a soup pan. Chop onion and saute in pan until soft. Add garlic, saute an additional 30 seconds. Add tomatoes. Slice carrots and add with beans, water, soup base, oregano, and thyme. Let simmer 15 minutes. Add lemon juice and spinach stir until spinach is wilted and serve.
