
I am in the midst of moving my daughter back to college. I was supposed to post yesterday; life got in the way. As I was thinking about what should I post, I thought of all the parents doing exactly what I am doing — running around getting kids ready for school. Some have already started school. Nothing is more straightforward than a one-pot meal on the table fast during the chaos of busy school nights. I love this because it’s hearty and easy. Serve this with salad and some warm bread to soak up any sauce left on your plate.

Ingredients
1 lb bulk italian sausage
1/4 cup white wine
2 cups chicken bone broth
1 package refrigerator cheese tortellini
4 cups fresh spinach trimmed
1/2 lemon
salt
parmesan for garnish
Directions
Roll Sausage into 1 inch meatballs. Sauté in large skillet over medium heat. turning as they cook, so to cook each side evenly. Once cooked add white wine and deglaze bottom of pan. Add bone broth and torellini. Stir and place lid on skillet for five minutes. Stir gently and add spinach zest and juice of lemon. Salt to taste. Garish with parmesan.
