
This is my big batch recipe. I make this large batch for the holidays or if I am planning two meals with mashed potatoes in one week. Sometimes it’s just a nice comfort food to keep around.
Makes 8 Servings
Carbs 47.5g Protein 6.6
5 lbs organic red potatoes
8 tbsp irish butter
2 tsp adobe seasoning
1 cup sour cream
Directions
Wash potatoes and trim any bad parts. Cube potatoes and place in a stock pot. Fill Stock pot with water until all potatoes are covered. Boil potaotes until tender. Remove potatoes and place into a bowl, discarding any loose potato skins. Add Remaining ingredients. Using an electric mixer, blend everything until smooth and creamy. Salt and pepper to taste. I prefer to reserve pepper for gravy.
