Blood Orange Low Carb Granola

I love this granola. It is dairy-free, gluten-free, and sugar-free. So it works with lots of the lifestyle diets out there. I am getting ready to travel, and I am taking this with me. I need whole snacks that can get me through long days on airplanes and shuttles.


1/2 cup sliced almonds

1/2 cup sunflower kernnels

1/2 cup pecan halves

1/2 cup unsweetened coconut flakes

1/2 cup pumpkin seeds

2 tbsp blood fresh blood orange juice

2 tsp blood orange olive oil

1/2 tsp vanilla extract

Salt to taste

Preheat oven to 350 degrees. Toss nuts and seeds together in a bowl. In a separate bowl, mix orange juice, oil, and vanilla. Pour over nut mixture and toss nut mix until coated. Line a baking sheet with parchment paper. Spread granola on baking sheet evenly. Bake 20 minutes. Toss mixture halfway. Let cool before eating and store in the refrigerator.
