
I love this lower carb jam. It does not have any added sugar. The best part of this quick jam it takes no time to make. I like to present my readers with approachable recipes that anyone can make. Does jam seem overwhelming you? This recipe is so simple anyone can make, your kids can help and they will love it. I do not can this jam, I am sure canning will work. I make Thumb Print Cookies and Raspberry bars. I keep some in the frig for everyone to use on toast. Toasted earthy bread topped with ricotta and some of this bright jam, perfect on sunny mornings.
Servings 28 (One Tablespoon)
Carb 3.5g Protein 0.5g
Ingredients
4 cups frozen raspberries
4 tsp chia seeds
1/4 tsp stevia
1 1/2 vanilla extract
Directions
In a sauce pan place raspberries. Use a potato masher and start mashing the raspberries as they warm over medium heat. Once they are all warm and mashed, add chia seeds and stevia. Stir until thickened. Remove from heat. Add vanilla and stir. Let cool, then jar into your choice of container.
