Ingredients
- cake mix
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup + 2 tbsp coconut sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp orange peel, dried
- 1/4 tsp ground cloves
- 1/8 tsp ground nutmeg
- 1 1/2 cup shredded carrot
- 1/2 cup half and half
- 4 tbsp Irish butter, melted
- 1 egg
- 1 tsp vanilla
- Icing
- 8 oz cream cheese
- 4 tbsp Irish butter melted
- 2 tbsp coconut sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven 350 degrees. Mix dry ingredients. Mix wet ingredients. Use electric mixer and add dry ingredients 1/2 cup at a time—place in a prepared cake pan or mini cake pans. Bake until a toothpick comes out clean. Depending on the cake pan will determine cooking time. Around 20 minutes, start checking.
