
These are just what they sound like biscuits with beer and cheese. Easy and quick to make anytime you are need a little carb with your meal. I made mini biscuits, however you can make larger ones. I used a light lager for the beer. This is a perfect recipe when you don’t have yeast or you are looking for a recipe that does not need to rest before baking. I use these as a side with soup such as Summer Bean Soup or as a base with for Gluten Free Breakfast Gravy. So easy they are a pantry staple.


Ingredients
- 2 1/4 cups all purpose flour (unbleached)
- 1/2 cup finely shredded mexican blend cheese
- 2 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 5 tbsp irish butter
- 3/4 cup beer
- 2 tbsp half and half for brushing
Instructions
- Preheat oven to 375 degrees.
- Mix dry ingredients and cheese. Melt butter. Add butter and beer to flour mix. Stir until it sticks together. Do not over mix. Lightly flour a cutting board and place dough on board, kneed 3 or 4 times. Just so it is soft. Form dough, so that is 3/4 inch thick. Cut into biscuits with a knife or biscuit cutter. I used a juice glass because I wanted to make small biscuits.
